Standard Betty Crocker recipe with Green Apples, my only additional tip is splashing some lemon juice on the cut apples to keep them from browning while you finishing cutting and prepping the rest of the pie.

Champagne & Vegan Mini Cupcakes!

Using Champagne in your cupcakes (+ frosting) adds a special touch to any event, esp Anna’s 1st SOLO Art Show!  I was also asked to make Vegan Cupcakes.  I’m a farm girl, I had never made anything vegan in my life, but this chocolate recipe was pretty simple (after spending 5 min finding vegan friendly margarine).  I got the Vegan thumbs up from Raighne & Meghan the owners of 2D Cloud Studio.  ALSO! A big thanks to Christina for helping me out with some of the frosting + decorating of the mini cupcakes.

Vegan Chocolate Cake/Cupcakes

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 1 cup water

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9×5 inch loaf pan.
  2. Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.

Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes for cake (adjust for cupcakes). Remove from oven and allow to cool. Frost.

The Hop 2010

The Hop is a charity event to raise money to the Steele County Clothesline. The theme this year for the bake sale was music themed and Theresa, Mike and I make a Jukebox Cake and Sugar Cookie LPs.

St. Patrick’s Day 2010

I baked, frosted and sprinkled almost 80 mini cupcakes for a MCAD St. Patrick’s Day party. I also made a green lemon/lime punch. It was like liquid candy.

St. Patrick’s Day Party Punch (Alcoholic)
Ingredients:
2 (12 oz) cans frozen limeade concentrate
2 (12 oz) cans frozen lemonade concentrate
2 (2 liter) bottles lemon-lime flavored carbonated soda (I used Sprite)
1 (750 milliliter) bottle rum (I used Bacardi Superior)
2 quarts lime sherbet

In a large pot, combine limeade, lemonade and lemon-lime soda. Stir in rum.  Mix in the lime sherbet. (Cuts in 1/2 really well.)

Dharma Cupcakes

These Dharma Cupcakes were made for a small gathering in celebration of the last season premiere of the ABC show – LOST!

The cupcakes were a yellow cake batter, with fudge frosting, topped with chocolate jimmies and different Dharma Icons seen through out the years of the show.
